Instant Pot Balsamic Red Wine Beef Roast

Serves 4 – 6 | Gluten Free

Ingredients:

  • 3-4 lb chuck roast (cut into 1″ cubes)
  • pinch of sea salt
  • pinch of black pepper
  • 2 tablespoons coconut oil
  • 3 slices quality bacon (thinly sliced)
  • 2 carrots (peeled and diced)
  • 2 celery stalks (diced)
  • 1 large onion (diced)
  • 4 teaspoons garlic (minced)
  • 2 1/2 cups dry red wine
  • 1 1/2 cup beef broth
  • 1/4 cup balsamic vinegar
  • 1 spring fresh rosemary
  • 1 sprig fresh thyme
  • 2 bay leaves
  • 2 tablespoons butter (cold)

Directions:

  1. Sprinkle salt and pepper over beef cubes.
  2. Press the sauce function on the Instant Pot.
  3. Add the oil and when hot, add the onions.
  4. Intermittently stir onions until tender.
  5. Add beef to Instant Pot and let sear on all sides.
  6. Press Cancel function on the Instant Pot.
  7. Add remaining ingredients to Instant Pot and lay butter across top of beef mixture.
  8. Place lid on Instant Pot and lock in place. Set seal to sealing.
  9. Press Meat function (roughly 40 minutes).
  10. Let Naturally Release for 5 minutes and then Manually Release remaining pressure.
  11. Carefully unlock lid and serve.

Great served with veggies or over polenta.
