Instant Pot Balsamic Red Wine Beef Roast
Serves 4 – 6 | Gluten Free
Ingredients:
- 3-4 lb chuck roast (cut into 1″ cubes)
- pinch of sea salt
- pinch of black pepper
- 2 tablespoons coconut oil
- 3 slices quality bacon (thinly sliced)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 1 large onion (diced)
- 4 teaspoons garlic (minced)
- 2 1/2 cups dry red wine
- 1 1/2 cup beef broth
- 1/4 cup balsamic vinegar
- 1 spring fresh rosemary
- 1 sprig fresh thyme
- 2 bay leaves
- 2 tablespoons butter (cold)
Directions:
- Sprinkle salt and pepper over beef cubes.
- Press the sauce function on the Instant Pot.
- Add the oil and when hot, add the onions.
- Intermittently stir onions until tender.
- Add beef to Instant Pot and let sear on all sides.
- Press Cancel function on the Instant Pot.
- Add remaining ingredients to Instant Pot and lay butter across top of beef mixture.
- Place lid on Instant Pot and lock in place. Set seal to sealing.
- Press Meat function (roughly 40 minutes).
- Let Naturally Release for 5 minutes and then Manually Release remaining pressure.
- Carefully unlock lid and serve.
Great served with veggies or over polenta.
