Instant Pot Baked Beans (vegan)

  • 1/4 cup water
  • 1 medium onion diced
  • 2 teaspoons smoked paprika
  • 2 teaspoon garlic powder
  • 2 cups pinto beans
  • 4 cups chicken or vegetable broth or half water + broth
  • 1/3 cup maple syrup can use no or egg sugar types
  • 1/4 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 2 tablespoons yellow mustard
  • 1 teaspoon coarse sea salt

  • Press the saute button on the Instant Pot.
  • Add the onions and water and saute until tender.
  • Add the paprika and garlic and mix well.(if it starts to clump up or stick to the bottom no worries)
  • Add the beans and broth and using a flat wooden utensil, scrape the bits off the bottom of the pot.
  • Add the syrup, tomato paste, vinegar, mustard and salt.
  • Combine well and secure lid and set seal to sealing.
  • Press the manual pressure button and direct time (using the "+" button to 75 minutes.
  • After cooking time has completed, let the Instant Pot naturally release its pressure for 20 minutes, then carefully manually release the remaining pressure.
  • Carefully remove the lid and stir beans.
  • Serve and enjoy.
