Nikki’s Favorite Breakfast | Eggs Benedict

english muffins
Saucepan filled with water brought to a small boil

large eggs
4 to 8
sliced of Candian bacon
otherwise known as ham

tablespoon
paprika
Hollandaise

egg yolks
1
tablespoon
lemon juice
or more as desired for flavor

teaspoon
Dijon mustard
1/4
teaspoon
salt
pinch
of cayenne pepper
1/2
cup
unsalted butter
Instructions
Directions
Carefully crack an egg into the slow boiling saucepan. Let the egg settle and create a white coat around it.
Combine all the hollandaise ingredients together in a small saucepan with a whisk and bring to a slow heat making sure not to curdle.
Remove the egg with a slotted spoon and place on the English muffin.
Ladle hollandaise over the top of the poached eggs.
And garnish with a sprinkle of paprika.
Serve hot, devour and enjoy.
Notes
**Best served with a mimosa (actually, MUST be served with a mimosa)
