Nikki’s Favorite Breakfast | Eggs Benedict

- 4 english muffins
- Saucepan filled with water brought to a small boil
- 4 large eggs
- 4 to 8 sliced of Candian bacon otherwise known as ham
- 1 tablespoon paprika
Hollandaise
- 3 egg yolks
- 1 tablespoon lemon juice or more as desired for flavor
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- pinch of cayenne pepper
- 1/2 cup unsalted butter

- Carefully crack an egg into the slow boiling saucepan. Let the egg settle and create a white coat around it.
- Combine all the hollandaise ingredients together in a small saucepan with a whisk and bring to a slow heat making sure not to curdle.
- Remove the egg with a slotted spoon and place on the English muffin.
- Ladle hollandaise over the top of the poached eggs.
- And garnish with a sprinkle of paprika.
- Serve hot, devour and enjoy.
Notes
**Best served with a mimosa (actually, MUST be served with a mimosa)
