Nikki’s Favorite Breakfast | Eggs Benedict

  • 4 english muffins
  • Saucepan filled with water brought to a small boil
  • 4 large eggs
  • 4 to 8 sliced of Candian bacon otherwise known as ham
  • 1 tablespoon paprika

Hollandaise

  • 3 egg yolks
  • 1 tablespoon lemon juice or more as desired for flavor
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • pinch of cayenne pepper
  • 1/2 cup unsalted butter

Directions

  • Carefully crack an egg into the slow boiling saucepan. Let the egg settle and create a white coat around it.
  • Combine all the hollandaise ingredients together in a small saucepan with a whisk and bring to a slow heat making sure not to curdle.
  • Remove the egg with a slotted spoon and place on the English muffin.
  • Ladle hollandaise over the top of the poached eggs.
  • And garnish with a sprinkle of paprika.
  • Serve hot, devour and enjoy.

Notes

**Best served with a mimosa (actually, MUST be served with a mimosa)
